| I remember coming home from school and having this wonderful smell of toasty coconut filling the air. I knew my mom was baking her special coconut pie.
2 Tablespoons melted butter 1/3 cup sugar 1/4 Teaspoon salt 3 eggs slightly beaten 1 cup light corn syrup 1 Teaspoon vanilla 1/2 Teaspoon Almond Extract 2/3 cup bakers fine grated coconut
1 Unbaked 9-inch pie crust, spinkle coconut over bottom of pie crust , then pour the filling over coconut. Pie serves 6-8 people . Preheat oven to 375 % Serve with Ice Cream if desired.
